The rump is, as the name suggests, from the backside of the cow - so whilst it’s from the part of the animal that works hardest, and it’ll need a longer cook out, the taste and texture more than make up for it.
For best results, cook in a heavy based pan, or on a skillet or griddle and make sure to rest the meat for ﬁve or ten minutes after cooking, so all the delicious juices can sink back into the meat.
